Arroz de Carreteiro
This is a dish originally from the south of Brazil, but nowadays it is popular all over the country.
It is made of rice, mixed with some kind of dried meat (jerked meat or sun dried meat mostly), sausage, carrots, and bell pepper.
It was a common dish prepared by the carreteiros, traveling carters who crossed the south of the country with wagons pulled by oxes. Since they travelled for days, they had to cook using dry ingredients that wouldn’t spoil during the journey.
